DIY Pumpkin Spice Latte

Ingredients:
1/2 cup ground coffee
2 T canned pumpkin
1/4 tsp pumpkin pie spice
2-3 cups  milk (optional: a combination of nondairy creamer and milk)
1 tsp pure vanilla extract
Optional: sugar to taste
Optional: 1/8 teaspoon ground nutmeg

Directions:
Mix everything.
For a hot latte, you can microwave. Add coffee and whisk again.

Top with Coconut Cool Whip if desired:
1 can full-fat coconut milk sugar, or powdered sugar to taste

Coconut Whipped Cream:
Open your coconut milk, leave the can (or transfer to a bowl) uncovered in the fridge overnight. It should get very, very thick. Once thick, transfer only the thick creamy part to a bowl and whip with your sweetener with a fork or beater.

Healthier Pumpkin Cream Cheese Bars

It’s finally that time of the year again! That’s right, it’s Fall. And how can fall be complete without one major staple? What is it? Pumpkin, of course!

Pumpkin is not only the favored dish for cooler autumn months, but it is also very healthy for you! It provides a lot of vitamin A, which is great for eyesight (more than 200% of recommended daily intake!). With the holiday seasons approaching, we all know its difficult to keep healthy when there’s food laid out everywhere. But pumpkin is a fiber-rich food which actually helps people shed those extra pounds. Also, another benefit of pumpkin is a certain chemical called phytosterol which has been shown to reduce cholesterol and makes your heart much stronger! It also helps reduce cancer, make your skin much healthier, boost your immune system and last but not least boost your mood (produces serotonin which plays a big role with chemicals of our brains, making us happier)!

We’ve compiled three healthy recipes you can make this autumn. Whatever the occasion is; a family gathering, birthday party, upcoming holidays like Halloween and Thanksgiving, these different pumpkin flavor treats are just exquisite.

Pumpkin Cream Cheese Bars

 Pumpkin Cream Cheese Bars

These can be gluten-free!
Ingredients:
1/2 cup all purpose flour
2 packets NuNaturals stevia (or 2 more tablespoons sugar)
1 tsp cinnamon
1/4 tsp pumpkin pie spice
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 eggs, lightly beaten
3 tablespoons brown sugar
1 can (15 ounces) solid-pack pumpkin
2 tablespoons milk of choice
2 tablespoons oil (coconut oil or vegetable oil will work)
1/2 tsp pure vanilla extract

Directions:
Preheat oven to 350 F. Combine dry ingredients, then add in wet. Spread into an oiled 7×5 pan (or double the recipe for an 8×8) and cook for 14-15 minutes. Note: You can sub agave for the sugar; they’ll just be fluffier/cake-ier.

Here is a healthy option for the cream cheese:
1/2 cup silken-firm tofu (Mori-Nu is a good option)
1/4 cup plus 2 tbsp cream cheese spread
1/2 tsp vanilla extract sweetener of choice to taste (recommend stevia or powdered sugar)
optional: dash of cinnamon

Directions:
Blend until smooth, then add the other ingredients and blend again

Back to School, or Not: Tips to Stay Active during the Fall Season

tipsforstayingactiveIt’s officially Fall, the time of the year where the leaves turn colors, going back to school, and ultimately the beginning of the holiday seasons. Also, it’s a great time to look at current health goals before the craziness of holiday events take over your schedule. Here are a few tips to help you stay active and healthy during the fall.

Depending on your region, temperatures still might vary. Fall might be one of the best times to exercise outside as the mornings are often cool and afternoons warm up. Looking up local parks or hiking trails in your area is a great start. Its a win-win situation when you can surround yourself with beautiful views while becoming healthy and exploring something new. It’s important to remember that exercise doesn’t have to be timed or at the gym.

You may not notice being thirsty as quickly in cool weather which can lead to dehydration. Fall can still have some hot temperatures, so make sure stay hydrated through out the day!

If you suffer from any type of joint pain, walking on nature trails is perfect for you. This helps reduce a repetitive stress that is caused by walking on a treadmill or pavement. If the weather isn’t looking good another option is go head to your local mall and go walking. Getting up and getting out somewhere to be active is better than spending the day inside your home sedentary.

Also, sunscreen is important year round, even when it is cooler or cloudy. Your skin deserves being healthy with the rest of you, so make sure you put on some every time you head outside.

The most important thing is to just get up and go enjoy yourself. Find the things you love to do and find ways to be more active with those activities. Possibilities are limitless!

Raw Lemon Bars (Vegan & Gluten Free)

Guest post by Active Accessories Ambassador, Abby Phon. When it comes to healthy recipes, Abby sure knows her stuff!

Crust:

  • 1 ½ cup raw organic walnuts
  • ½ cup raw unsweetened shredded coconut
  • 10 organic Medjool dates
  • ½ tsp sea salt
  • 4 tbsp lemon zest

Filling

  • ¾ cup organic extra virgin coconut oil
  • ¼ cup maple syrup
  • 6 tbsp lemon juice
  • 1 tbsp lemon zest
  • 5 drops stevia (to taste)
  • Pinch turmeric, for color.

Directions:

  1. Using a food processor, combine all the crust ingredients until uniform. (It will still be a little chunky.)
  2. Press into an 8×8 Pyrex dish (or similar).
  3. Place the coconut oil into a small bowl.
  4. Beat the coconut oil with a mixer 1-2 minutes (until creamy).
  5. Add in the lemon juice, zest, maple syrup, stevia and turmeric and mix until combined.
  6. Spread the filling over the crust.
  7. Place into the fridge or freezer 20-30 minutes (until set).
  8. Cut and enjoy!

Note: If you freeze these, leave them out to soften a bit before serving.

Run for Boston – Help us Donate to The One Fund Boston

The tragic events that occurred during the Boston Marathon this past Monday will never be forgotten. In order to honor everyone affected by the tragedy, Active Accessories will be taking an active part in the relief effort. As an organization, we stand for “being active,” which means healthy living, especially through running. Company founder, Karen Welby, has been a competitive runner for over 15 years, coached collegiate student athletes, and privately trains clients for road races.

As the world’s oldest annual marathon, the participants, the supporters, and the event itself represent an ideal of our healthy living model. Consequently, the tragedy that occurred here comes as an attack on our values as a company, as runners, and as human beings. Ensuring the comfort and care of the victims, and supporting the continuation of all marathons requires standing strong with Boston.

As sign of support and unity, from now until May 15th at 2:50pm EST, we will donate $2 to the The One Fund Boston for every Active Hair Band Bracelet Set sold.

Massachusetts governor Deval Patrick and Boston Mayor Tom Menino established The One Fund Boston “to help the people most affected by the tragic events that occurred in Boston on April 15, 2013.” Victims’ enduring struggles will be both physical from injuries and psychological from the day’s trauma.  Pain will also spread to victim’s families, friends and communities who must support them in these difficult times.

Join us in doing our part to lift up all of them, runners, families and friends like all of us, as they strive to overcome this tragedy.
